Man shot by officer in stabbing out of hospital

PROVO — A man who police say stabbed a stranger with scissors outside an Orem restaurant has been released from the hospital and booked into jail.

Sergio Walter Weffer, 33, was booked into the Utah County Jail for investigation of aggravated assault Tuesday afternoon about 12:30.

Police say Weffer approached a couple outside IHOP at 850 W. University Parkway on Sept. 13 and, after startling them, apologized, then began stabbing the 28-year-old man.

An off-duty Chicago police officer in Orem for training saw the scuffle as he left the restaurant and demanded that Weffer stop and drop his weapon.

When Weffer made another stabbing-type motion at the man, the officer shot Weffer in the back.

Weffer was recovering at Utah Valley Regional Medical Center until he was healthy enough to be transported to the jail.

The stabbing victim is recovering in Idaho. The officer was not injured and is back in Chicago.
